Homemade Whole-Grain Pancake Mix
1. Grind the oats in a food processor until they're chopped fine, but not a powder.
2. Put the flour, oats, and all other dry ingredients into a mixer with a paddle. Mix on slow speed, and drizzle the vegetable oil slowly while the mixer is running.
3. Store in an airtight container for up to two weeks at room temperature, or indefinitely in the refrigerator or freezer.
4. To make pancakes: Whisk together 1 cup of mix, 1 cup of buttermilk, and 1 large egg. Let the batter stand for at least 20 minutes before cooking.
5. Heat a lightly greased griddle to 350°F or medium-hot. Drop the batter onto it in 1/4-cupfuls to make a 4" diameter pancake. After about 2 minutes, flip the pancake over to finish cooking.

Frequently Asked Questions
What makes King Arthur Organic Bread Flour a premium choice over supermarket brands?
It combines 12.7% protein with USDA Organic, Non-GMO Project Verified, and Kosher certifications in a single bag — a rare combination that signals craftsmanship and pedigree, not commodity flour.
Does the heritage of King Arthur Baking Company add value to the purchase?
Yes. Founded in 1790, King Arthur is America's oldest flour company, and the 100% employee-owned structure reflects a long-term commitment to milling excellence that mass-market brands can't match.
Is the packaging presentation suitable for a high-end kitchen pantry display?
Yes. The branded 5 lb bag has a clean, recognizable design and resealable closure that looks tidy alongside ceramic canisters, copper mixing bowls, and other elevated kitchenware.
Will this flour elevate the crumb and texture of my artisan loaves?
Yes. The 12.7% protein supports more aggressive gluten development, which translates to a taller rise, an airier open crumb, and a chewier final texture in artisan-style breads.
Is the milling quality of this flour noticeably different from cheaper alternatives?
Most bakers find it is. King Arthur has refined its milling process for over two centuries, producing a consistent, fine grind that hydrates evenly and yields more predictable dough behavior.
Does unbleached flour actually perform better than bleached for serious bakers?
Many serious bakers prefer unbleached because it preserves the wheat's natural enzymes and proteins, leading to better flavor development and a more authentic crumb in long-fermented doughs.
Can this flour support the demands of high-hydration artisan and sourdough recipes?
Yes. The 12.7% protein is well-suited to high-hydration doughs, helping them develop the structure and open crumb characteristic of country loaves and rustic boules.
How does the resealable bag protect the quality of the flour over time?
The resealable closure minimizes air and moisture exposure, which helps preserve freshness, aroma, and protein integrity over many weeks of regular use.
Is the employee-ownership of King Arthur relevant to a luxury-oriented buyer?
It can be. Knowing that craftspeople — not distant shareholders — benefit from your purchase is part of the brand's premium narrative and aligns with luxury buyers who value provenance.
How does this compare to imported Italian '00' flour for artisan baking?
'00' flour is finely milled for low-protein, soft-textured doughs like delicate pastas and Neapolitan pizza, while this bread flour is a high-protein American artisan flour better suited to chewy, structured loaves. Many luxury pantries keep both.
Is this a more sophisticated choice than a typical bread machine flour?
Yes. Bread machine blends are engineered for convenience, while this flour gives you a chef-grade ingredient with milling heritage and clean certification — a different category of product altogether.
I'm hesitant to pay more for flour when I can buy a cheaper bag — is the premium worth it?
If you value the combination of organic certification, 12.7% protein, heritage milling, and employee-ownership in one bag, yes. It is a meaningfully different product, not just a different label.
Does this flour perform as well in a home European-style deck oven or outdoor pizza oven?
Yes. The high protein handles the intense heat of outdoor pizza ovens well, producing a puffy, charred cornicione and a tender, chewy base — exactly what serious pizza enthusiasts aim for.
Can I confidently gift this as a luxury hostess offering?
Yes. Pair it with a wooden bread board or a small bottle of olive oil and you have a sophisticated, edible hostess gift that reflects taste and culinary awareness.
Will I notice a flavor difference compared to a generic all-purpose flour?
Many bakers do. Unbleached bread flour has a cleaner, wheatier flavor profile without the slightly flat taste that bleached or highly processed flours can produce in finished loaves.
How do I substitute this bread flour for all-purpose flour in a recipe?
You can substitute it 1:1 by volume in most yeasted recipes. For yeast-based breads, expect a slightly taller rise and chewier texture. For delicate cakes or pastries, you may want to blend it with a lower-protein flour to avoid toughness.
How long does an opened 5 lb bag stay fresh?
Stored in a cool, dry pantry in its resealable bag, the flour typically stays fresh for 6 to 12 months. For longest shelf life, transfer to an airtight container and keep it away from heat, light, and moisture.
Do I need to sift this flour before baking?
Sifting is optional. King Arthur flour is finely and consistently milled, so most bakers measure directly. Sifting can help if you want extra-light, airy doughs or are combining it with other dry ingredients.
Does this flour work with a stand mixer, bread machine, or by hand?
Yes. The 12.7% protein content performs well with any kneading method — stand mixer with a dough hook, bread machine on a dough cycle, or traditional hand-kneading. Adjust hydration as needed for very stiff doughs.
Can I use this flour to make both yeasted breads and enriched doughs like brioche?
Yes. The high protein supports yeasted loaves, and the strength also handles enriched doughs like brioche, dinner rolls, and hamburger buns, giving them a soft but structured crumb.
What comes in the bag — is the 5 lb the only size available?
The product ships as a single 5 lb resealable bag of King Arthur Unbleached Organic Bread Flour. No additional tools, yeast, or recipe cards are included.
Is the flour safe for people with common wheat allergies or celiac disease?
No. This is a wheat flour and contains gluten. It is not suitable for people with celiac disease or wheat allergies. Always check ingredient labels for personal allergen concerns.
Is this product manufactured in a facility that handles allergens like nuts or dairy?
King Arthur's manufacturing facilities follow strict allergen-control protocols. The bag is labeled pareve and dairy-free, but for severe allergies, always contact the manufacturer directly for the most current allergen information.
What is the difference between bread flour and all-purpose flour?
Bread flour has a higher protein content (12.7% here, vs. roughly 9–11% for all-purpose), which develops more gluten during kneading. This produces stronger, chewier doughs that hold their shape and rise higher in yeasted breads.
